And Leon's getting LARGER....

Just thought I would fill you guys in on what I had for dinner last night. I made a roast pork tenderloin stuffed with a sun-dried-tomato pesto with a roasted red pepper sauce and served it with homemade gratin potatoes with portobello mushrooms and a mix of parmesan, asiago, and fontina cheese. It is the second best pork I have made (the first being a really nice pork a napoli). Only took 2 HOURS! I also realized that I can get tilapia (it's a fish) for like $.80 per pound and I have a great recipe for a parmesan crust that I used on some fresh grouper this summer. Plus it goes great in my own personal recipe of Risotto with white balsamic mushrooms and roasted red pepper. Also, made some homemade pancakes this morning using a touch of nutmeg and vanilla in the batter. Very good stuff.

I have a dinner coming up on Sep. 14th for about 80 people. Ken and I are going Asian so I need to come up with some good stuff. Let me know if you have any favorite asian dishes that I could play around with.

Also, all of the new freshmen arrived on campus today for Orientation, which means those crazy kids with their loud bass will be arriving shortly and keeping me up 'til 3 am. And next week starts the season and getting up a 4 am. YEAH!!

sounds delicious. but two hours? jesus, brother.

for the record, asiago is my new favorite cheese. I use it on asparagus instead of the traditional parmesan. also for the record, besides potato, asparagus is the only vegetable I know how to cook (boy would it be great to have someone to cook for me.)

as for some asian suggestions...
if you want to go southeast asian, I would try the thai soup called tom yum gai. it's made with coconut milk. un-f'ing-believable. I also like the dish called "larb." it's a minced chicken with lemon, mint and spices on romaine leaves. delicious.

if you want to go japanese...pot stickers (gyoza) always a fave. you can either do a chicken, shrimp or vegetable gyoza.

or sushi!
